اثر زمان برداشت و اندازه میوه بر ویژگی‌های فیزیکی و بیوشیمیایی میوه انار (Punica granatum) رقم رباب نی‌ریز در قلعه‌تل باغملک

چکیده
انار میوه‌ای نافرازگراست و برای داشتن بهترین عطر و طعم باید در مرحله رسیدگی کامل برداشت شود. به همین منظور آزمایشی جهت بررسی اثر زمان برداشت و اندازه میوه برای تعیین بهترین تاریخ برداشت و دستیابی به انار با کیفیت خوب در منطقه قلعه‌تل باغمک (استان خوزستان) انجام گردید. در این آزمایش، در سه مرحله (15 مهرماه، 1 آبان‌ماه و 15 آبان‌ماه) میوه‌های انار برداشت و به سه اندازه بزرگ، متوسط و کوچک تقسیم شدند. نتایج حاصله نشان داد زمان برداشت و اندازه میوه بر وزن میوه، حجم میوه، میزان آنتوسیانین، میزان ویتامین ث، اسیدیته قابل تیتراسیون، مواد جامد محلول، نسبت مواد جامد محلول به اسیدتیه قابل تیتر، میزان فعالیت آنتی‌اکسیدانی و محتوای مواد فنولی میوه انار رقم رباب نی‌ریز اثر معنی‌داری داشت. میزان مواد جامد محلول در برداشت سوم، 16/16 درصد بود و بین میوه‌های متوسط و کوچک تفاوت معنی‌داری مشاهده نشد. میزان اسیدیته قابل تیتراسیون، نسبت مواد جامد محلول به اسید در برداشت سوم به‌ترتیب 1/04 و 16/2 درصد بود. در مجموع نتایج به‌دست آمده بیانگر این است که میوه‌های متوسط برداشت سوم (اواسط آبان‌ماه) کیفیت بهتری نسبت به میوه‌های سایر برداشت‌ها داشتند.

Background and Objectives
Pomegranate (Punica granatum) is a nonclimacteric fruit rcent respectively. In general, the results of the present study confirmed that the medium fruit size at the third harvesting time has a better quality as compared to other sizes and harvesting times.
